Doesn’t that just sound delicious? I suppose you have to like jalapeno poppers and chicken to enjoy this, but what’s not to love?
While browsing the many tasty recipes on Skinny Taste the other day, I came across this must try recipe for Cheesy Jalapeno Popper Baked Stuffed Chicken. I recommend checking it out, along with all the other wonderful ideas that Gina comes up with. Kevin and I print out recipes on Skinny Taste all the time. There are some great recipes that are low cal, but taste good too! Kevin has even gotten the approval on some of the dishes when we cooks them at work (for tableful of hungry firemen I’d say that’s pretty good!).
You can check out the whole recipe here, but I did make one change to it. I subbed Canadian bacon for the regular bacon (I already had the Canadian bacon on hand). I also removed all the jalapeno seeds, and chopped the peppers pretty small. Next time I might leave some of the seeds in and leave the peppers a little large to give it a little more heat/flavor. But all in all, it was fantastic!
This chicken dish was one of my favorites that I’ve tried on Skinny Taste. I ended up cooking the entire recipe and freezing the remaining for another meal. I have yet to eat the frozen portion, but I am hoping it tastes just as good the second time around.
