A Semi-Healthy BBQ Chicken Pizza

I’m a pretty big fan of pizza…good pizza (like Lou Malnatis).

I may even go so far as to say it is my favorite food.  99% of the time I would order green pepper and onion.  Unfortunately I’m on a diet…but I still love pizza. See the dilemma here?

The other day Kevin bought some low calorie flatbreads for chicken wraps.  The wraps were good, but what were we going to do with the left over flatbreads and chicken? Why, a dieters version of BBQ chicken pizza of course!  

Who doesn’t love BBQ chicken pizza?  Anyone?  Anyone?  I think not.  

I found a regular recipe on all recipes, and altered a few things to come up with this:

A Semi-Healthy BBQ Chicken Pizza (serves 2)

Ingredients:

2 flatbreads

1/2 cup BBQ sauce

2 boneless skinless chicken breasts, cooked, and sliced

4 sliced pepperoncinis

1/2 of a sliced red onion

1 1/2 cup shredded low fat or fat free cheese (I used a combination of both)

A splash of hot sauce (optional)

Directions:

Preheat oven to 350 F.  Prepare a  baking sheet with cooking spray.  

Place flatbreads on sheet and top each with 1/2 of the remaining ingredients.  

Bake at 350 F for 8-9 minutes or until cheese is melted.  

This was delicious!  It actually tasted very similar to California Pizza Kitchen’s version….but I’m pretty sure this was a little better for the waistline.  

If anyone is following weight watchers out there, each flatbread pizza worked out to be about 13 points using:  Flatout Light Italian Herb flatbread, Sweet Baby Ray’s BBQ sauce, 3 oz of chicken, and a combination of 1/2 cup fat free cheese and 1/4 cup reduced fat cheese.  

What is your favorite kind of pizza?  Kevin loves anchovies or roast beef; anyone else out there like that?  crickets….crickets…
